For lunch today I made poor man’s pasta. For this dish you will need:
¾ of cup uncooked whole wheat or regular pasta
1 spoon of Olive Oil
Pinch of salt
2 spoons of breadcrumbs
2 spoons of crumbled Goat cheese or Feta cheese
6-9 Kalamata Black Olives
Ketchup
This is very easy way you make pasta for one and on a budget.
You first boil water in a medium size pot. Once the water is boiling add a pinch of salt. This will prevent the pasta from sticking on the bottom of the pot. Also add the ¾ of a cup of whole-wheat pasta and let it boil for 12 to 14 minutes. If you like harder pasta get it off the fire on 12 minutes, and for softer pasta cook to 14 minutes. Once the pasta has cooked, you drain the water through pasta strainer.
I prefer whole-wheat pasta because, like the brown rice vs. the white rice, whole-wheat pasta is not bleached and it has greater health benefits then the regular white pasta.
At this point you can put the drained pasta back in the empty pot. In a different small pan heat up the Olive oil and add the two spoons of breadcrumbs, to lightly fry them. Be careful not to burn the crumbs, since this is a very quick process of frying. Pour the fried breadcrumbs on top of the pasta and stir.
Serve the pasta in a bowl or a plate. On top of the pasta spray some Organic Ketchup. Now, this is the most expensive product of this meal. You can use regular Ketchup, but the reason why I love the Organic Ketchup is because it’s like a homemade Tomato sauce.
If you look up the back of the Organic Ketchup bottle, you will find not more then 4 or 5 ingredients which you will be able to recognize and articulated. Unlike the Organic Ketchup, regular Ketchup has all kinds of unpronounceable substances, and the greatest evil of our time High fructose corn syrup.
In the end chop the pitted Kalamata Black Olives and sprinkle them on top. Also sprinkle the Feta or Goat Cheese. Both these cheeses have lower calorie content, especially the Goat cheese. Mix it all and … wait.
Yes wait. The latest studies have shown that eating pasta cold is much better for digestion. Our digestive system has problems breaking down warm or hot pasta. It has the tendency to pile it up more and longer, therefore causing you to gain weight. So wait a little and let it cool off. Luckily, pasta tastes just as great warm or cold. Enjoy.
