Today’s meal is another vegan recipe for my Fasting diet. This is a pudding or it can be used as a cream to spread on bread. It’s enough for 4 puddings or spreads that can be used for multiple meals. For this you will need:
500 ml or water
20 grams of Stevia
3 big spoons of Corn Starch
50 grams of Dark Chocolate
1 Avocado
½ a French Baguette (If you are eating this as a spread)
First thing you will mix the 20 grams of Stevia with the 3 spoons of Corn Starch, by adding only 3 spoons of cold water in a small bowl.
The remaining water you will need to boil in a medium size pot. When the water is boiling you can add the Corn Starch and Stevia mix to it. You will have to keep on stirring the entire time. If you stop stirring, the whole thing will stick to the bottom, which is what you are trying to avoid.
In the pot then you add the broken down chocolate to melt it in the mix and keep on stirring.
Before you start cooking the thing, I recommend to mash the avocado so it will be ready to be added in smoothly to the mix.
Take the pudding off the fire and let it cool.
At this point, add the mashed avocado in the warm pot and keep on stirring for another minute or so, off the fire.
Leave the whole thing to cool off completely and it’s ready to serve.
It can be eaten as pudding or used as spread on bread.
Cut the French Baguette in small slices and spread the mix on top of it and enjoy.
