Grilled Vegetables and Sautéed Spinach 40 Days of Fasting Day Five

Today’s recipe is another vegan recipe for the Fasting diet. You will need:

1 Zucchini
2 Roasted peppers
2 Scallions
100 Grams of Spinach
3 cups of Water
2 Tablespoon of Olive Oil
2 Pinches of salt

Grilled Vegetables

 

There are two different ways you can prepare the grilled vegetables.

 

First thing you need to slice the zucchini in circles. Then chop the peppers into little squares and mince the scallions into small pieces.

 

One way to cook this meal is in a Multi Electric Grill.

First thing you will put a baking paper on the base of the Electric Grill. Then you will place the zucchini circles on it. Next, place a Pepper square on each squash and 1 of the chopped scallions all over it. Spread 1 tablespoon of Olive Oil on top and season it with 1 pinch of salt.

 

Close the Multi Grill and set it up to cook on 30 minutes.

 

If you don’t have a Multi Electric Grill, another way to cook this is in the oven.

 

Use cookies pan and line it with baking paper.

 

Layer the vegetables the same way as above. First line up the zucchini circles, then place the squares of pepper on top and the sprinkle the chopped scallion. Spread 1 tablespoon of Olive Oil all over and season it with 1 pinch of salt.

 

Preheat the oven at 400 F and place the pan inside. Let it cook for 30 minutes.

 

Take it off the oven and it’s ready to serve.

 

Sautéed Spinach

 

The first step to making the spinach is to wash the fresh spinach.

 

Next you can boil the 3 cups of water in a pot. When the water is boiled, turn off the fire and put the fresh spinach in the hot water and let it stay in it for few minutes. The spinach will shrink from this process. Drain the whole water out of the pot.

 

Use a pan and put in it 1 tablespoon of Olive Oil and heat it up.

 

Chop 1 scallion and put it in the heated oil to lightly sauté it.

 

Next add the scalded and drained spinach in the pan and keep on sauteing for few more minutes. Add some salt and take it off the fire.

 

The meal is now ready to serve.
