Green Salad with Chickpeas 40 Days of Vegan Fasting Day Twenty-Seven

Today’s recipe is another for my Vegan Fasting Diet. You will need:

7 Green Salad Leaves
1 Scallion
½ a Cucumber
1 Teaspoon of Olive Oil
1 Teaspoon of Balsamic Vinegar
Pinch of Salt
¼ Cup of Chickpeas
5 Olives
1 Cups of Water

Sometimes you just need something simple like this salad.

In a medium size pot, boil the chickpeas with 1 cups of water on medium heat until they cook and become soft.

 

Chop the green leaves salad, the scallion, the cucumber and the olives.

 

On top add the drained chickpeas and season it with the Olive Oil, Balsamic Vinegar and a pinch of Salt.

 

The meal is ready.
