Quinoa with Black Beans 40 Days of Vegan Fasting Day Thirty

Today’s meal is another for the Vegan Fasting diet. You will need:

 

50 grams quinoa
¼ Cube of Vegetable stock
150 grams of water
¼ Onion
¼ can of Black Beans
¼ cup of Tomato Sauce
1 tablespoon of Olive Oil
Pinch of salt

 

In a medium pot put the water. Then add the quinoa and ¼ cube of vegetable stock.

 

Cook it on a medium heat on the stove for 30 minutes. By then the water should evaporate.

 

In a pan heat up the Olive Oil and add the chopped onion to sauté it lightly. Chop the beans to make them resemble ground beef. Add them into the pan and keep on sautéing. Also add pinch of salt.

 

In the end add the tomato sauce.

 

Pour the bean mix on top of the quinoa and the meal is ready to serve.
