Strawberry and Cookies Pudding 40 Days of Vegan Fasting Day Thirty-Two

Today’s recipe is another for my Vegan Fasting Diet. You will need:

 

250 grams of Fresh Strawberries
2 tablespoons of Sugar
1 Lemon
250 ml Vegan Vegetable Sweet Cream
100 grams of Vegan Cookies

 

First chop the strawberries in half.

 

In a medium pot, add the strawberries, with the juice from one lemon and two spoons of sugar. Cook them on a medium fire for 5 minutes.

In a bowl break the cookies in smaller pieces. Then add a little of the Vegetable Sweet Cream, while it’s still in liquid form, to soften the cookies.

 

Put the rest of the Vegetable Sweet Cream in a mixing bowl, and whip it with a mixer until it turns into a fluffy cream.

 

In the bowl with the cookies, add the lightly cooked strawberries, and on top add the fluffy cream.

Put it in the fridge to cool off for at least half an hour before you serve it.
