Today’s recipe is another for my Vegan Fasting Diet. You will need:
1 Cup of String Beans
1 Carrot
½ an Onion
¼ Cube of Vegetable Stock
2 Tablespoon of Olive Oil
2 Cups of Water
1 Tablespoon of Flour
1 Cup of Oat Milk
½ a cup of Tomato Sauce
Pinch of Garlic Powder
Pinch of Salt
Pinch of Oregano
In a medium size pot, heat up 1 tablespoon of Olive Oil. In it, add the chopped Onion and sauté it lightly. Then add the chopped carrot and keep on sautéing. Next, add the sting beans and sauté it for few more minutes. In the end add the 2 cups of water, with the ¼ cube of Vegetable Stock and the pinch of Salt, Garlic Powder and Oregano. Let it cook on medium fire for about 40 minutes.
5 minutes before the String Beans end cooking, add the ½ a cup of tomato sauce.
In a different pot, heat up 1 tablespoon of Olive Oil. Then add the flour and stir for 30 seconds. Next, add the cup of Oat Milk and stir. You keep on stirring until the whole thing has the thickness of a pudding.
In a casserole pan pour the cooked String beans mix. On top, pour the Oat Milk mix.
Preheat the oven on 400 F, put the casserole pan and cook the meal for about 10 minutes.
Take it out of the oven and let it cool off for few minutes.
The meal is ready to serve.
