Chickpeas Salad 40 Days of Vegan Fasting Day Twenty

Today’s recipe is another for my Vegan Fasting Diet. You will need:

½ a cup of uncooked Chickpeas
4 cups of Water
1 tablespoon of Olive Oil
Pinch of Cajun
Pinch of Salt
½ a Cucumber
½ a Tomato
½ an Avocado
7 Olives
½ a cup of Pasta

In a medium size pot, boil the chickpeas with 2 cups of water on medium heat until they cook and become soft.

 

Next, heat up the Olive oil in a pan and add the drained chickpeas with a pinch of Cajun and pinch of Salt. Sauté the chickpeas until they turn brown for few minutes.

In a different medium size pot, boil 2 cups of water. When the water is boiling add the pasta and cook for 10 minutes. Half way through the cooking you can stir the pasta briefly so it won’t stick. Drain the water out of the pot.

 

Chop the cucumber, the tomato, the avocado and the olives.

 

In a bowl put all the ingredients: the pasta, the chickpeas, the cucumber, the tomato, the avocado, and the olives. Mix the whole thing and it’s ready to serve.
