Today’s meal is another for the Vegan Fasting Diet. You will need:
200 grams of Fresh Mushrooms
½ Chopped Onion
2 Avocados
1 Tomato
2 Scallions
1 Lemon
2 Pinches of Salt
1 Pinch of Black Pepper
2 Tortilla Wraps
1 Tablespoon of Olive Oil
Sautéed Mushrooms
First thing you can do is wash and chop both the mushrooms and the onion.
Next, in a medium size pan put the Olive Oil and heat it up. Add the onions and sauté them lightly. Then add the chopped mushrooms and keep on sautéing. Season it with a pinch of salt. As the mushrooms shrink, you will know they are ready and cooked.
Guacamole
First you can chop the scallions, mince the tomato and squeeze the lemon.
Next peel the avocados, remove the pit and mash the avocados in a medium size bowl. To it add the minced tomatoes, the scallions, the lemon juice and season it with pinch of salt and pinch of black pepper. Stir the whole thing and your guacamole is ready.
For the last step of the meal, warm up the Tortilla wrap in a pan on a high heat. Turn the tortilla after one minute on each side.
Put it on a plate and in the middle add the sautéed mushrooms and the guacamole, wrap it and it’s ready to eat.
