Mushrooms Bolognese Pasta 40 Days of Vegan Fasting Day Fifteen

Today’s recipe is another for the Vegan Fasting Diet. You will need:

200 grams of uncooked Spaghetti
4 Cups of Water
½ a Cup of Tomato Sauce
2 Chopped Scallions
1 Chopped Carrot
200 grams of Chopped Mushrooms
Pinch of Salt
Pinch of Black Pepper
Pinch of Oregano
2 Tablespoon of Olive Oil

In a medium pot boil the water. When the water is boiling add the spaghetti and cook for 10 minutes. Half way through the cooking you can stir them a little so they won’t stick. Drain the water out of the pot and add ONE tablespoon of the Olive Oil.

In a pan add the other spoon of Olive Oil and let it heat up on a medium fire. Then add the chopped scallions first and sauté for few minutes. Next add the chopped carrot and keep on sautéing. Lastly add the chopped mushrooms and continue sautéing.

 

If you have a food processor it is nice to use it for the mincing of the mushrooms. That way they will shred to such small pieces, it will end up resembling ground meat. In a way this will trick your brain that you are eating a real meat Bolognese sauce.

In the end, add the Tomato Sauce and stir the whole mix into the pasta.

 

The meal is now ready to serve.
