Orzo with Vegetable Cream 40 Days of Vegan Fasting Day Twenty-Six

Today’s recipe is another for my Vegan Fasting Diet. You will need:

100 grams of Orzo pasta
1 Cup of Cauliflower
1 Carrot
2 Scallions
½ a Cup of Chickpeas
Pinch of Salt
Pinch of Black Pepper
Pinch of Garlic Powder
6 Cups of Water

In a medium size pot, boil the chickpeas with 1 cups of water on medium heat until they cook and become soft.

Next, in a different pot, boil the chopped Carrot, chopped Scallion, and the chopped Cauliflower, with 3 cups of water and a pinch of salt, Black Pepper and Garlic Powder. Cook it on a medium fire, slowly for 20 minutes.

In a third medium pot, boil 2 Cups of Water. When the water is boiling, add the Orzo pasta and cook it for 10 minutes. Drain the water out of it.

In a food processor put the drained and cooked chickpeas, and all of the boiled vegetables with the little water that will remain in the second pot. Blend the whole thing, until it turns into a cream.

Pour the cream on top of the Orzo and the meal is ready to serve.
