Today’s recipe is another for my Vegan Fasting Diet. You will need:
2 Scallions
100 grams of Pinto Beans
1 Carrot
¼ of Vegetable Stock Cube
¼ cup of Tomato Sauce
Pinch of Salt
Pinch of Cajun Seasoning
3 cups of Water
First chop one scallion and the carrot.
In a medium size pot put the water, the beans, the chopped scallion, the vegetable stock cube, the carrot and season it with pinch of salt and pinch of the Cajun seasoning.
Put it on a medium to low fire to slowly cook for 3 hours. If too much of the water evaporates, add another cup.
In the end chop the second scallion and lightly sauté it in a dry pan. As the scallion starts to sear, you can add some of the beans mix in the pan, so that it won’t burn.
Add this back to the beans mix and add the ¼ cup of Tomato Sauce. Let it cook for another 10 minutes and the meal is ready to be served.
