Sautéed Zucchini and Mushrooms 40 Days of Vegan Fasting Day Thirty-Four

Today’s recipe is another for my Vegan Fasting Diet. You will need:

1 Zucchini
100 grams of Mushrooms
1 Scallion
¼ cup of Tomato Sauce
1 tablespoon of Olive Oil
Pinch of Salt

 

First chop the zucchini, mushrooms and the scallion.

 

In a medium size pan heat up the Olive Oil, then add the chopped zucchini and sauté it.

Then add the mushrooms and keep on sautéing. When they shrink, add the chopped scallion and keep on sautéing.

 

Season it with a pinch of salt, add the tomato sauce and sauté it for few more minutes.

 

Take if off the fire and the meal is ready to be served.
