Spinach with Rice 40 Days of Vegan Fasting Day Twenty-Four

Today’s recipe is another for the Vegan Fasting Diet. You will need:

300 grams of Spinach
½ a cup of Rice
3 cups of Water
Pinch of Salt
½ Cube of Vegetable Stock
1 Scallion
1 Tablespoon of Olive Oil

In a medium pot, heat up the olive oil, on a medium heat. Add the chopped scallion and sauté it lightly. Add the rice and keep on sautéing. Next add the chopped spinach and put only one cup of water at first.

The spinach will slowly sink into the water, at witch point you will add 2 more cups of water. In the whole mix add pinch of salt and the ½ cube of Vegetable stock.

 

Stir it briefly and let it slow cook on a medium fire for about 30 minutes. Most of the water will evaporate.

 

The meal is ready.
