Turkish Simit

We eat our memories. As a child, I grow up with this delicatessen called Turkish Simit. The closest to this is the sesame bagel. However there is a finish to the Simit that makes it different then a bagel. You will need:

 

½ cup room temperature Water
2 tablespoon Olive Oil
½ teaspoon Salt
1 teaspoon Sugar
1 ½ cup all-purpose Flour
1 ½ teaspoon dry Yeast

And to dip the Simit:

2 tablespoon molasses mixed with 3 tablespoon water.
¾ cup sesame seeds

 

You can mix the water, olive oil, salt, sugar, flour and the yeast in that order.

Keep on kneading it. At first it will feel wet, but it will get firmer. After 10 minutes of kneading, cover the dough and leave it in warm place to rise and double in size. It will take from hour to hour and a half for the dough to rise.

Split the dough in 4 equal balls.

Using your hands make a long rope out of each ball. Split each rope in 2 and twist them together. Then join the ends to form a circle, and press to join them.

In a bowl mix the molasses and water, and dip each simit in the mix.

On a plate place the sesame seeds, and dip each simit in it too.

Place on a baking sheet, and bake in a preheated oven of 400 F, for 15 to 18 minutes, till they have golden crust.
