Vegetable Quinoa with Avocado Sauce 40 Days of Vegan Fasting Day Sixteen

Today’s meal is another for the Vegan Fasting diet. You will need:

2 scallions
50 grams quinoa
¼ Cube of Vegetable stock
30 grams mixed vegetables (Peas, Corn and Carrots)
150 grams of water
Pinch of Salt

 

1 Avocado
½ a Scallion (the green part)
Pinch of salt
Pinch of Black Pepper
1 Tablespoon of Lime Juice
Pinch of Turmeric

 

Vegetable Quinoa

 

In a medium pot put the water, and then add all the ingredients: the quinoa, ¼ cube of vegetable stock, the vegetables, and chopped scallions.

 

Cook it on a medium heat on the stove for 30 minutes. By then the water should evaporate and the meal is ready.

 

Avocado Sauce

 

In a blender or food processor put the pealed avocado, the chopped ½ a scallion, the salt, black pepper, the turmeric and the spoon of Lime Juice. Blend it, and it’s ready to serve.

 

Put the Avocado on top of the Vegetable Quinoa and your whole meal is ready.
