Vegetable Rice with Sautéed Mushrooms and Honey Mustard 40 Days of Vegan Fasting Day Seventeen

Today’s meal is another for the Vegan Fasting diet. You will need:

2 Scallions
100 grams of mixed vegetables peas, carrots, corn
½ of vegetable stock cube
Pinch of Salt
Pinch of Black Pepper
1 cup or Rice
3 cups of Water
1 tablespoon of Olive Oil

200 grams of Mushrooms
1 Tablespoon of Olive Oil

2 Tablespoons of Honey
2 Tablespoons of Mustard
Pinch of Salt

Vegetable Rice

First thing you will chop the scallion.

In a medium size pot you put the Olive Oil to heat up. You add to it the scallion to sauté it.

After that you add the mixed vegetables, and keep on sautéing it lightly.

In the next step you add the cup of rice and keep on sautéing and stirring the whole thing.

You season the meal with the salt and pepper and then you add the three cups of water.

After you add the water put in the ½ of vegetable stock cube and mix it all in.

You set the pot on a medium fire and let it slow cook 30-40 minutes until most of the water evaporates.

 

Sautéed Mushrooms

 

In a pan, heat up 1 tablespoon of Olive Oil on the stove.

Add the chopped mushrooms and sauté them until they shrink.

Add a pinch of salt.

 

Honey Mustard

In a small dish mix 2 spoons of honey, with 2 spoons of mustard and a pinch of salt. The sauce is ready.

 

Pour some of the honey mustard on both the mushrooms and your vegetable rice for delicious results.
